Oatmeal raisin cookies

Ingredients ( for 20 small size cookies)

butter (at room temperature) - 1/2 cup /120ml   (1 cup size = 240 ml)
brown sugar - 1/2 cup
white granulated sugar - 40 ml
egg - 1
vanilla extract - 1/2 tsp
all purpose flour (maida) - 3/4 cup
baking soda - 1/2 tsp
salt - 1/2 tsp
cinnamon powder - 1/4 tsp
raisins (golden or black) - 1/2 cup
Oats (Old fashioned rolled oats ) - 1 1/2 cups

  • In a bowl, sift flour, baking soda, salt and cinnamon powder and mix well
  • In another bowl, add butter, brown sugar and white sugar. Mix well using a whisk or hand mixer till the butter becomes soft, smooth and creamy
  • add egg and vanilla extract and mix well
  • add the flour mixture little by little to the batter and mix
  • finally stir in rolled oats and raisins
  • preheat the oven to 350 degrees Fahrenheit (180 degree Celsius)
  • line the baking sheets with parchment paper
  • using a tablespoon, place around 10 cookies in each baking sheet. Leave enough space between the cookies as the cookies tend to expand while baking
  • flatten the cookies slightly to 1/2 inch thickness

  • place the baking sheet in the oven and bake it for 12 - 14 mins. The cookies are done when the edges become golden brown in color and the center is soft. (The longer the cookies bake, the more crispy they will be. But make sure, they don't get burnt)
  • Once done, remove the baking sheet from the oven and let it cool for few minutes in the baking sheet before you transfer it to the wire rack to keep cooling
  • If you are two baking sheets, then you can bake both at the same time. Otherwise, place the second batch of cookies for next 12 - 14 mins.
  • store in air tight container and enjoy during tea time
