Watermelon Granita

Watermelon granita

I got this recipe from food network channel's "Pioneer Women"
 show by chef Ree Drummond.

Ingredients ( Servings - 5)

Seedless watermelon chunks- 2 cups (1 cup size = 500 ml)
lemon juice - 20 ml (taken out of one medium size lemon)
sugar - 40 ml

  • cut watermelon into chunks of around 2 cups.
  • grind the watermelon, lemon juice and sugar in a blender until smooth
  • pour into a separate bowl
  • freeze the mixture for nearly 2 to 3 hours.
  • After 3 hours, scrap the top layer using a spoon or fork
  • place the bowl back in the freezer with shaved ice on top. Leave it for couple of hours and then continue scraping
  • repeat this scraping process until you reach the bottom of the mixture.
  • store in freezer, covered in plastic wrap until serving
  • Serve in a glass or bowl.

Note: If you are using watermelon with seeds then you can either remove the seeds before grinding or lightly blend the chunks, strain the mixture and then blend it with lemon juice and sugar.
