Ingredients (serves for 2)
cooked parotta - 3 (medium size)
onion - 1
tomato (medium size) - 1 1/2
cumin seeds - 1 tsp
curry leaves - 2 sprigs
green chili - 2
ginger garlic paste - 1 1/2 tsp
salt - as needed
oil - 3 tsp
turmeric powder - 1/4 tsp
red chili powder - 1 tsp
garam masala - 1 tsp
eggs - 2
pepper powder - 1/2 tsp
coriander leaves - for garnishing
Method:
- chop the cooked parotta to small pieces
- chop onion, tomato. Slit green chilies lengthwise.
- heat a vessel with oil and add cumin seeds, curry leaves and green chili
- once it splutters, add chopped onion
- once the onions become transparent, add ginger garlic paste
- fry till the raw smell goes off. add chopped tomato
- cook till the tomatoes become mushy
- add salt, turmeric powder, red chili powder and garam masala
- mix well. pour the eggs and mix well
- saute till the eggs scramble and raw smell goes off
- add chopped parotta pieces and mix
- add pepper powder, cook it for a minute and then garnish it with coriander leaves
- serve hot with onion raita.
