Healthy oats upma - quick recipe


Healthy oats upma

Ingredients (serves for 2)

Oats (I used quaker original oats) - 1 1/2 cups (1 cup size = 235 ml)
water - 1 cup
salt - as needed
green peas (fresh or frozen) - 1 fist full
carrot - 1
beans - 6
onion - 1
ginger - 1 inch piece
green chili - 3 - 4 nos
sugar - 1/4 tsp
mustard seeds - 1 tsp
urad dal  - 1 tsp
channa dal - 1 tsp
peanut - 2 tablespoon (optional)
oil - 2 tsp

Method:

  • fine chop ginger and chop onion, carrot, green chili, beans to small pieces
  • heat a vessel with oil and add mustard seeds, urad dal, channa dal and peanut.  (Adding peanut is optional)
  • once the mustard seed splutters, add chopped onion, green chili and fine chopped ginger
  • saute till onion become transparent
  • add green peas and cook for 2 mins
  • add chopped carrot, beans and sugar and cook covered for 3 - 4 mins
  • once the veggies are cooked , add salt and 1/2 cup of water and bring it to boil
  • add oats and cook covered for 2 mins
     
  • add another 1/2 cup of water and cook covered for 2 - 3 mins.
  • Serve hot
