Ingredients (serves for 3):
potato - 1 fist full (chopped)
carrot - 1 fist full (chopped)
beans - 4 -5 nos or 1 fist full (chopped)
drumstick - 6 -8 pieces (chopped)
green chili - 6 - 7 nos
moong dal - 1/2 cup (1 cup size = 150 ml)
turmeric powder - 1 pinch
salt - as needed
thick coconut milk - 1 cup
diluted coconut milk - 1 1/2 cup
ginger - 2 inch pieces
lemon juice - 1 tsp
Method :
- chop the veggies and slit the green chili lengthwise. (Add drumsticks for extra taste and flavor)
- grind ginger, add 1/4 cup of water and extract the ginger juice.
- pressure cook moong dal with turmeric powder for 3 whistles
- First coconut milk, after grinding the coconut in 3/4 cup of water gives you thick coconut milk
- With the same grounded coconut, add 1 1/2 cup of water and extract the coconut milk to get the diluted coconut milk
- if you are using canned coconut milk, use 1 cup of canned coconut milk in place of thick coconut milk. Mix 1 cup of water in 1/2 cup of canned coconut milk to get the diluted coconut milk.
- Saute the chopped veggies for 2 mins
- add the diluted coconut milk (1 1/2 cup) and let the veggies cook in that
- once the veggies are cooked, add salt, cooked moong dal and extracted ginger juice
- let it cook for 4 - 5 mins
- add the thick coconut milk (1 cup), cook it for just 2 mins and switch off the flame.
- before serving, add 1 tsp of lemon juice. Don't add lemon juice earlier as it will give sour taste. add the lemon juice just before serving.
- Best side dish for this gravy is Spicy potato curry and Coriander thokku .
- This gravy helps to reduce dry cough.
