Ingredients
Besan flour (kadalai maavu) - 1 1/4 cup (1 cup size = 150 ml)
Sugar - 1 1/2 cup
water (for making sugar syrup) - 1/2 cup
baking soda - 1 pinch (optional)
food color - 1 pinch (optional)
cloves - 3
cashews - 10 nos
elachi powder - 1/4 tsp
elachi (whole) - 1
oil - for frying
ghee - 1 tsp
Method:
- Mix besan flour, baking soda, food color and enough water to get a batter like dosa batter.
- Heat a vessel with sugar and 1/2 cup of water
- stir it and boil it until it reaches one string consistency. Meanwhile heat a vessel with enough oil for making boondhi.
- you can check the one string consistency by pouring one drop of sugar syrup in 3 tsp of water. the syrup will not get dissolved, it will stay there.
- Switch off the flame having sugar syrup and keep it aside.
- Use 2 ladles, one with small holes and one for pouring the batter
- once the oil gets heated up, pour the batter in the perforated ladle
- take out the boondhis once its' 3/4th done and put it in the sugar syrup
- fry cashews and cloves in 1 tsp of ghee and add it to the sugar syrup
- split one elachi and add it along with elachi powder in the sugar syrup
- mix everything and once it gets cooled, store it in air tight container.
