Coconut mint chutney


Ingredients (serves for 2)

chopped coconut - 3/4 cup (1 cup size = 150 ml)
mint leaves - 1 cup
red chili - 2
urad dal - 1 tsp
mustard seeds - 1 tsp
oil - 3 tsp
tamarind - 1/2 inch piece
salt - as needed

Method:


  • Grind chopped coconut coarsely
     
  • heat a vessel with 2 tsp of oil and add urad dal, red chili and tamarind
  • saute it for 2 mins and then add mint leaves
  • fry till the mint leaves gets shrunk
  • grind this along with grounded coconut

     
  • add salt and 3/4 the cup of water 
  • temper mustard seeds with 1 tsp of oil and add it to the chutney
  • Serve with Idly, dosa etc.,
