Peanut rice




Ingredients:

Cooked rice - 1 1/2 cup (1 cup size = 150 ml)
peanuts - 1/2 cup
grated coconut - 1/2 cup
red chilli - 4 - 5 nos
sesame seeds - 1 tsp
salt - as needed
asafoetida - a pinch
mustard seeds - 1 tsp
urad dal - 1 tsp
curry leaves - few
sesame oil - 4 tsp

Method:


  • dry roast the peanuts, remove the skin and let it cool. I used roasted salted peanuts. (If you have roasted peanuts, no need to fry it again, just use it directly)
  • heat a pan with 2 tsp of oil and add 1/2 tsp of sesame seeds and red chilli
  • saute it for a min and add the grated coconut. 
  • fry till the coconut becomes golden brown in color
  • grind this mixture and roasted peanuts coarsely
  • heat a pan with oil and add mustard seeds, urad dal, curry leaves and 1/2 tsp of sesame seeds
  • add the cooked rice and asafoetida
  • saute it for a minute and then add the powdered peanut and coconut mixture. 
  • add salt and toss it for 4 - 5 mins. 
  • Enjoy with potato chips or any dry curries.
