Kalkandu Satham (sugar candy rice)



Ingredients


raw rice - 3/4 cup ( 1 cup size = 150 ml)
kalkandu (sugar candy) - 3/4 cup
sugar - 1/4 cup
cashews - 5 - 8 nos
water - 3 cups
milk - 1/2 cup
ghee - 6 - 8 tsp
elachi powder - a pinch
moong dal (paasi parupu) - 1 1/2 tsp


Method:


  • Powder the sugar and kalkandu together and keep it aside. You can also add it without powdering the kalkandu (sugar candy)

  • Wash the rice, drain the water and keep it aside
  • heat 1 tsp of ghee in pressure cooker and fry cashews. Now take out the fried cashews and fry the moong dal
  • add washed rice in the cooker and add 3 cups of water
  • give 3 to 4 whistles and switch off the flame.
  • Mash the cooked rice by adding milk.
  • Now keep the cooker again in the medium flame and add powdered sugar and ghee little by little .
  • Stir it for 5 - 8 mins. 
  • add the fried cashews. 
  • You can make this for any festival / occasion.
