More Kuzhambu



Ingredients (serves for 4):


Sour curd / butter milk - 2.5 cups (1 cup size = 150 ml)
ladys' finger - 2 (you can also use any one of these vegetables: white pumpkin, chow chow)
shallots - 6 ( you can also substitute with 1/2 of big onion)
mustard seeds - 1 tsp
urad dal - 1 tsp
cumin seeds - 1 tsp
red chill - 3 nos
curry leaves
green chilli -  6-8 nos
ginger - 2 small pieces
salt - as needed
coriander seeds - 1 tsp
grated coconut - 1/2 cup
turmeric - 1/2 tsp
asafoetida - a pinch
oil - 2 tsp

Method:


  • Chop the shallots / onion and ladies finger to smaller pieces
  • Heat a pan with two tsps of oil and add mustard seeds, urad dal, curry leaves, red chilli, onion, asafoetida and sliced vegetable (ladys' finger)
  • Fry till the veg gets shrinked /cooked and onions become golden brown color. Keep it aside.
  • Grind grated coconut, green chillies, ginger, coriander seeds and cumin seeds with little water. 

  • Mix this mixture with curd and add turmeric, salt & 1 cup of water to it. 
  • Heat this in stove in medium flame only up to the stage when it starts to raise. It will be frothy and it should not boil. 
  • Season it with the fried items (onion & lady's finger).
